Dear friends,
We’re coming to Los Angeles.
This spring, we’ll spend sixteen weeks in LA, from March 11 to June 26, cooking, listening, learning, and building a body of work rooted in this place. Alongside the residency, which will be documented as part of a special film project, we’ll open a Noma Projects shop in Silver Lake, host events with friends at MAD, and collaborate with cooks, artists, and communities we admire across the city.
In LA, our cooking will be shaped by what exists here — the Pacific, the mountains, the desert, and the long distances between them. We’ll spend time getting to know ingredients, producers, and traditions, and let that guide what ends up on the plate, filtered through our imagination and the know-how we bring with us from Denmark.
We’re grateful for the opportunity to be in Los Angeles, and thankful to everyone welcoming us to the city!

Details:
- Bookings will be offered as a package including menu, beverage pairing, hospitality and tax. The price of the package is 1,500 USD.
- A prepayment of the full amount is required to complete a booking. The payment will be charged in local currency, USD. Cancellations can be made with a refund up until four weeks ahead of the booking date. In the event of a cancellation, kindly note that a 4% administration fee is non-refundable.
- When making a booking, you have ten minutes to complete your purchase. We recommend having an additional method of payment on hand to reduce any issues with payment during checkout.
- Once a booking is completed, please note that it is not possible to change the time or date of the visit, or transfer the booking to another person.
- Members of Blackbird Club will have special access to dedicated seats and events throughout the residency via the Blackbird Club Concierge.

Industry Table
We are offering an opportunity for young industry professionals to attend Noma LA, on the house.
This opportunity is open to professionals aged 25 and under who are working within the restaurant or hospitality industry in LA. Selected applicants will join the shared booking with other emerging voices in the industry for the event’s full menu and beverage package.
Applications will be reviewed on a case-by-case basis. In the event of availability, selected applicants will be contacted directly by the noma booking team using the details provided. Please note that we cannot guarantee a seat or a specific date for your visit.
Upon submission, you will receive an email confirming your application. Applicants will be contacted throughout our LA residency. Kindly note that we are unable to provide updates on application status.

Noma LA partners
Through a series of initiatives, Noma LA is partnering with local educators, hospitality professionals, and community leaders, allowing us to learn from Los Angeles while contributing something meaningful in return.
Noma LA is donating 1% of revenue from public bookings sold (excluding tax and refunds) and directing it to provide professional training sessions and community dinner programs for school districts in and around the Los Angeles area. Administered through our sister nonprofit MAD, the initiative is delivered in collaboration with our friends at Brigaid and its team of dedicated chefs to help schools move toward healthier, scratch-cooked meals. The partnership’s community meals will bring together students, families, and educators, celebrating the essential role school food plays in children’s health, learning, and sense of belonging.
In collaboration with Culinary Careers Program (C•CAP), Noma LA will welcome alumni and students from underserved communities for mentorship, workforce-development and hands-on experience. The collaboration includes on-site educational opportunities for students and paid roles for select C•CAP alumni. This initiative aims to provide real-world mentorship and foster the next generation of culinary professionals. The goal is simple: to create access, confidence, and curiosity for those at the beginning of their culinary journeys — helping them see what’s possible within the craft.
Noma’s nonprofit sister organization, MAD, is bringing its signature mash up of bold ideas and community-building to Los Angeles in spring 2026, joining forces with the city’s hospitality industry to imagine a better future of food—together.

Dear friends and guests,
For almost a decade, we’ve been trying to come to America—and it’s been close a few times.
Then, about two years ago—with the help of a few good friends—we found a place we fell in love with.
It had to be Los Angeles. I love this region. The vast Pacific. The farmers’ markets overflowing with produce in the middle of January. A place where you can have tacos for breakfast and a Thai tasting menu in an alleyway for dinner. Oaxacan mole from a strip mall. A great-grandmother’s kimchi soup served at 2 a.m. in Koreatown.
L.A. is a city of wild contrasts—a place that makes you ask: how can these things go together? (Like a Danish Albanian in Los Angeles?)
But when things collide, something surprising can happen. Again and again, I’ve found that in this sun-drenched city.
So, it’s a dream to finally come and cook here. To learn from a whole new group of people—all the cooks, the farmers, the fishermen, the foragers of this region.
There’s the Central Valley. The olive groves in Ojai. A coastline touched by vineyards and seafood. The desert—what flavors are growing there? Backyard citrus spilling over fences. Fig trees strung across freeway overpasses.
To cook here is to experiment. To remix. To step into a new nature like it’s the very first time So, what happens when we bring our way of dreaming, thinking, working to all of this?
We’re finally going to find out.
