Dear friends,

we’re going back to Kyoto.

Noma will return to Ace Hotel Kyoto for a 10-week residency, from October 8th to December 18th.    
  

During the sakura season in 2023, after many years of traveling and exploring all corners of Japan, our entire staff moved to Japan’s ancient capital, along with their children, spouses, and significant others. It was one of the most fulfilling and creatively electric periods in our team’s history.  
  

Now, we will have the chance to do it again—but this time, we’ll immerse ourselves in the autumn season, which presents a completely different array of flavors and ingredients. The explosion of reds and golds that define this season is stunning. So, too, are the ingredients synonymous with fall in Japan—wonders that grow in the forest, beautiful seafood, and a variety of game. Working closely with an incredible network of purveyors and artisans, our connection to one of the richest food cultures on earth will only deepen.  

We cannot wait to share it all with you.

Dear noma friends,

Kyoto is calling. 

Last spring, all 103 of us, along with our families, had the unique chance to immerse ourselves in a culture that has inspired noma since the earliest days of our restaurant.    

There, in the height of sakura season, the creativity flowed effortlessly, sparking some of our best work yet. It was a time of vibrant energy and inspiration, a dream of a trip, a highlight of the past decade for our team. 

Upon our return to Copenhagen, a question lingered in the air: Was that just the beginning? Our new friendships and connections with an incredible network of artisans, artists, farmers, and foragers made us wonder: Could we experience Kyoto in a different and very special season, like the autumn “koyo,” when the leaves change and the city becomes a canvas of colors? 

We started planning our way back almost immediately. 

And now, we’re thrilled to officially announce noma’s return to the city that became our home for a significant part of last year. I cannot wait to rediscover the city’s hills on hikes, forage wild foods with friends, dive into the peak of crab season, and explore all the new ingredients that this autumn will offer. 

Following our second stay in Kyoto, we’ll head back to Copenhagen, where another Ocean Season awaits in early 2025. Then it’s time to enter a bold new chapter for our restaurant.
